PASTA BEAN SALAD

This is a great salad for those of us who take our lunches to work. Very easy also.
I use this same recipe eliminating the pasta and add grilled turkey or chicken.

2 C cooked penna pasta and chill or cool off under water (or any pasta you might have)

Combine in large air tight bowl:
Pasta
Sliced celery hearts with leaves
15 ounce an of Pinto beans rinsed
15 ounce can of Garbanzo beans rinsed
1/2 C of Edamame bean thawed and rinsed (these I find frozen)
  hubby doesn't like to many
Chopped red onion (amount depends on you. I use 1/4 C)
1/2 can of small black olives
1/4 C fresh parmesan cheese (plz don't use that powdered stuff in a box)
1/2 tablespoon dried basil or 8-9 chopped fresh basil
Salt/pepper
3/4 C Italian dressing (I use Newman's)
1 teaspoon cane sugar
1 1/2 tablespoons red wine vinegar (optional, I like the extea zing)
P in air type bowl and shake to combine

This needs to sit for a few hours....if you can keep folks out of it.

    Thank you for your comment on my blog. I really appreciate this. The home that my friend owns in Nevada is in Dayton, near Carson City. which is south of Reno.
    We had such a great time felting slippers, hats and flowers. We all used different kinds of wool for the projects. I use Merino wool roving from A Child's Dream in Sandpoint Idaho. It's a good company to order from and the wool is wonderful. It felts really well. Take a look at their site at: achildsdream.com.
    It takes about 3 hours to get to Dayton from Jackson, CA. where I live. I go this route often enough that I'm getting comfortable with the drive... and it's so beautiful on both sides of the Sierra Nevada Mts. I love Nevada.
    The slippers were a real learning curve for me but I was so satisfied with them. Next I want to knit a pair of socks.
    Hope you are adjusting to Texas. I've never been there, but would like to see it sometime.

    1. I try to make meals that are easy and fast. Sometimes I just make up things. For example, I wanted to make Beef Stroganoff tonight, but didn't have any sour cream so I made Beef Broccoli over rice.
